PopPop’s Blueberry Pie

This is a deep-dish pie. Find the deepest pie pan you can find, I like glass.

2 lbs frozen blueberries

½ cup flour

½ cup turbinado sugar

½  tsp cinnamon

½ lemon (juiced)

Mix all ingredients in a mixing bowl and stir occasionally while blueberries are thawing.

Roll out pastry as thin as possible. One shell will do both crust and lattice. Put pie crust in pie pan. Cut excess crust flush with top of pie pan.

Add blueberry mixture carefully trying to compact gently.

Bake at 450 deg. F. for 15 minutes to set crust.

Then bake at 300 deg. F. until pie filling is bubbling.

Add Pastry Lattice (favorite) or Crumb Topping (below) and bake at 300 deg. F. for 15 more minutes.

Pastry Lattice

Cut pastry in thin strips and apply to top of pie. Sprinkle coarse turbinado sugar thinly over top

Crumb Topping

½ cup rolled oats

½ cup flour

¼ cup turbinado sugar

¼  cup softened butter

¼ tsp cinnamon

¼ tsp nutmeg

Combine all dry ingredients and mix thoroughly.

Then cut-in softened butter until mixture is crumbly.
